Total destemming whithout crushing, part of manual destemming, fermentation in open tank with spontaneous yeasts. Tanned with skins for 6 days, with soft and manual overdrive. Pressing in vertical press. Conclusion of the fermentation in stainless steel. Stage: Part of the lot staged in used french oak barrels and the other part in stainless steel. Climate: Microclimate created between the Atlantic breeze and the Serra de Montejunto, with morning fog throughout the year and high rainfall.
