Winemaking: Organic viniculture, Herbicide-free farming, Use of natural yeast. Grapes from small viticulture in the Mountain of Montejunto from vineyards having COZs coordination.
Hand harvested at prime maturity. Castelão underwent non-fermentative maceration par- tially with steams in 1000 litres dornas for three days and then was pressed to age on old Burgundy barrels for 11 months. Malolactic completed.
