Grapes harvested at desired maturity. Manual collection, sorting on the plot. Total destemming and direct pressing. Static cold settling. Vinification without sulfur and with indigenous yeasts. Aging on fine lees in stainless steel tanks. Total So2 after setting: 15 mg / l.
The aromatic harmony of Grenache, Cinsault and Mourvèdre gives it notes of strawberries and white flowers. Its mouth is fresh and sweet.

In 2002, when Emilie and Brice Bolognini were barely over 20 years old, they decided to take over the Mas Mellet estate in Gallicia in the Gard. At the time, it was 27 hectares of abandoned vines. Regardless of the work to be done, they had their first vintage in 2003.
Very quickly, the evidence of working organically led the couple to reduce the cultivated land to now 16 hectares in production. In the vineyards, manual labor takes precedence and the sheep work during the winter. Their Certification arrived in 2007.
