Blend of two fields with very different characters.
Young vines planted in 2009 on the coteaux in iron rich, rocky soil. Older vines (20 yrs) on a deeper, calcium rich soil.Macerated for 3 weeks in whole clusters and sealed in fiberglass tanks. No punching down or pumping over. Grapes were removed from the tanks, then pressed. Free run juice and pressed juice were reassembled to finish the sugars. Malolactic was immediate
Conditioned in recycled Champagne bottles and sealed with crown caps.
