50% Cabernet Franc / 50% Groslot
Conditioned in recycled Champagne bottles.
Sealed with a crown cap.
Fermentation with indigenous yeast.
Macerated for 5 days in sealed fiberglass tanks. Machine harvested (de-stemmed).
No punching down/ pumping over.
Hand picked. Full clusters. Short 10 day maceration in sealed steel tank. No punching down/ pumping over.
Grapes were removed from the tanks, then pressed. Free run juice and pressed juice were reassembled to finish the sugars.
The wine was finished before November. Malolactic was immediate. Both varieties are from the same field. Deep drought resistant soil.
Bottled without filtration. Certified organic by Bureau Veritas.
