Winemaking: This blend is obtained from plots in Santiago del Teide, the vines of which are root-safe (pie franco), from the indigenous grape varieties Listan Prieto, as well as a small proportion of tintilla. These are located at around 1,100m above sea level. The Envínate team grows the grape varieties separately, both in concrete and in open fermentation tanks. Maceration is 10-30 days (depending on parcel) with daily punch-down; malolactic fermentation is in neutral French barriques, then raised 8 months in the same barrels without battonage or added SO2. Bottling is without fining or filtration.

The winery was founded by four young adults who met while studying oenology, and decided to set up Envínate to develop wines in the different zones from where they came from. Always with the spirit of winemakers and with respect for the land, they aim to intervene as little as possible when transforming the grapes into wine, true craftsman. At Envínate, the four pursue a simple goal: each parcel should express its character to the maximum. Traditional methods in vineyard and cellar work should be useful. Accordingly, Envínate dispenses with conventional fertilizers and pesticides, fining agents as well as the use of pure breeding yeast. The wines remain unfiltered and are only preserved with a minimum of sulfur. Soils: granite, lime, slate & volcano. www.envinate.es
