Grapes are handpicked and harvested in the cool of the morning in 6 Kg crates. Whole bunches are crushed by feet then put into a concrete vat of 25 Hl.
Fermentation take place with indigenous yeast . During the 4 to 5 weeks of fermentation we do a few punching of the cap and a few remontage. The wine is racked and left on his fine lees for 6 months in stainless steel where the Malolactic fermentation takes place then it goes into old 225 l barriques and old demi muids for another 18 months. The wine is racked into stainless steel prior to bottling. No fining, no filtration, no added sulfites.
Taste: Lovely dark red color. Deliciously perfumed with blackberries followed by a hint of spice, liquorice and mint. The well balanced tannins offers touches of silky plums and a mineral spicyness. Great balance in total adequation with the vineyard. Very long finish well structured with a good acidity.
Taste Notes Spectator: Again, what a surprising wine! Fantastic juice from a region I'm normally not too find of, but this shows real class. Lovely, soft aromas of impressive depth with a nice funky bend to it. Funky palate, which is lovely and smooth. Elegant, though mellow. Impressive presence. What! The fruit on the finish! What fantastic dance of thick, luscious fruit, acid, and an elegant texture that's left. Just so smooth throughout. A truly awesome wine. Just 13,5% alcohol... the way all Languedoc Roussillon should be, perhaps.--

In 2001 we decided to purchase our very own vineyard in the Roussillon region of France, in the heart of the Agly Valley, South of France. Our vineyard spreads across 6 hectares (about 15 acres). The isolated location of the vines between forest and steep rocky hills allows us to work in « partnership » with the surrounding countryside. Each plot is fenced to protect our crops from wild boar and deer. Year after year, flora and fauna is increasing in biodiversity.
We do not use chemical fertilizers, weed killers, pesticides or any other synthetic molecule. Weeding is done manually, the pruning is adapted to each individual vine tree and we plough only once a year, in winter. Our main focus is to help the vines find their own balance between what they produce and the ground supporting them. We only harvest in the cool of the morning in small crates. The grapes are handpicked when they reach their utmost gustatory and phenolic maturity. We sort them in the vineyard before taking them to the cellar to stay at a low temperatures overnight.
All wines are named after the land registry except Maquis. We are part of the Vinnatur Association.
