Hand harvested in the fresh morning at prime maturity. Old vines of Baga from "Quinta das Cozinheiros" a vineyard located 5 miles from the Atlantic coast in Figueira da Foz, north of Lisbon. The 50-year-old clay/limestone vineyard is a co-plantation of whites and reds, with Baga being the predominant grape. Baga did ferment with native yeasts in 1000 litres dornas (half of the plot fermented with steams). Aged in old Burgundian barrels for 15 months. Malolactic completed.
