„The wine we've always wanted to make.
When we started to take care of this portion of abandoned vineyard, with its old crooked vines, we were not sure what to expect from it but we soon imagined making a wine from there.
The mixture of varieties was such in the vineyard that diversity was guaranteed, we just needed to find the right point of maturation to harvest. So, we first picked the white grapes, which are mostly, in the middle of September, manually for 13 kg boxes. They waited in the cold for the first days of October when we harvested the red grapes, and then went together to the cellar.
The grapes were simply disfigured and trampled on foot, they were left to steep until fermentation spontaneously started and were then pressed into two used 225 liter barrels. The wine finished the alcoholic fermentation, made the malo-lactic immediately and stayed there until May of the following year, when we made the batch and bottled 580 bottles.
The result is a fresh and elegant wine with intense notes in the mouth
It is best to drink it fresh like a white but also at the temperature of a red. - Always with great pleasure.“
